Vegetable Biriyani

  • 3 cups basmati rice
  • 2 medium size chopped tomatoes
  • 2 medium size chopped onion
  • 3 tsp salt (as per taste)
  • 2 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp biriyani powder (use any store bought biriyani powder)
  • 1/2 tsp garam masala powder (use any store bought powder)
  • 1 and 1/2 tsp ginger garlic paste
  • 4 and 1/2 cups of water
  • 1/4 cup cooking oil
  • few mint leaves
  • 2 tbsp chopped cilantro

Vegetable Biryani is a bold and flavorful Indian rice dish with choice of vegetables like peas, carrots and potatoes in a spiced rice dish made with turmeric, garam masala and other warm spices. It can go with any raita and chips.

Instructions

  • wash and soak rice for 10 minutes
  • drain water and keep it aside
  • in the instant pot set saute mode for 15 minutes and add cooking oil
  • once it's heated add garam masala powder, chopped onions, 1/2 tsp salt and saute for 1 minute
  • then add ginger garlic paste and saute for another minute
  • add mint leaves and saute for 30 secs
  • add chopped tomatoes chilli powder, turmeric powder, coriander powder and salt
  • cook until tomatoes have softened
  • add all chopped veggies
  • mix well and add rest of the salt
  • cook for 2 minutes
  • add 4 and 1/2 cup water
  • add biriyani masala powder and chopped cilantro
  • add drained rice
  • close the lid and change to pressure cook mode, cook for 6 minutes on high pressure mode
  • once the timer is off let it cool for 10 minutes and then release the pressure slowly
  • open the lid once all the pressure is released and mix the biriyani gently (over mixing will smash the rice)
Tips & Tricks
  • wash and soak rice for 10 minutes
  • after 6 minutes of cooking release the pressure manually to avoid over cook the rice

Step by Step Instructions

  1. wash and soak rice for 10 minutes, drain water and keep it aside

  2. in the instant pot set saute mode for 15 minutes and add cooking oil, once it's heated add garam masala powder, chopped onions, 1/2 tsp salt and saute for 1 minute, then add ginger garlic paste and saute for another minute, add mint leaves and saute for 30 secs

  3. add chopped tomatoes, chilli powder, turmeric powder, coriander powder and salt

  4. cook until tomatoes have softened

  5. add all chopped veggies, mix well and add rest of the salt, cook for 2 minutes

  6. add 4 and 1/2 cup water, add biriyani masala powder and chopped cilantro

  7. add drained rice

  8. once the timer is off let it cool for 10 minutes and then release the pressure slowly

  9. hot yummy biriyani is ready and can be served with raita and chips.!!
