chop veggies
add it to the pressure cooker along with onion, tomatoes, vegetables, and 2 cups of water, pressure cook for 2 whistles OR 20 minutes in high pressure mode in the instant pot
open the cooker once the pressure is released, add tamarind juice, sambhar powder, turmeric powder and salt, boil for 5 minutes on medium high
in a small pan heat cooking oil, add mustard seeds wait until sputters, add methi seeds let it turn slightly brown, add curry leaves and asafoetida, pour the tempering into the sambhar mixture, add chopped cilantro leaves
enjoy with plain white rice, idli, dosai, and venpongal.!!
