Sambhar

  • 1 cup toor dal
  • 1 medium size chopped onion
  • 2 medium size chopped tomatoes
  • tamarind (lemon sized) extract juice using 1 cup of water
  • vegetables of choice (1 medium size carrot 1 , 10 beans, 5 pieces of drumstick)
  • 1 tsp salt (as per taste)
  • 1 and 1/2 tsp sambhar powder (use any store bought sambhar powder)
  • 1/4 tsp turmeric powder
  • 2 tbsp chopped cliantro OR as per taste
For tempering
  • 2 tsp cooking oil
  • 1 tsp mustard seeds
  • pinch of asafoetida
  • 1 sprig curry leaves
  • 8 to 10 methi seeds

Sambhar is a delicious south indian dish that can go with plain white rice, idli, dosai, and venpongal. It is also known as lentil soup and is a protein rich dish.

Instructions

  • wash toor dal and add it to a pressure cooker along with onion, tomatoes, vegetables, and 2 cups of water
  • pressure cook for 2 whistles OR 20 minutes in high pressure mode in the instant pot
  • open the cooker once pressure is released
  • add tamarind juice, sambhar powder, turmeric powder and salt
  • boil for 5 minutes on medium high
Tempering
  • in a small pan heat cooking oil
  • add mustard seeds wait until sputters
  • add methi seeds let it turn slightly brown
  • add curry leaves and asafoetida
  • pour the tempering into the sambhar mixture
  • add chopped cilantro
Tips & Tricks
  • soak tamarind in hot water to extract the juice easily
  • if sambhar is too thick add hot water
  • use choice of vegetables(brinjal medium size, okra x6)

  6. enjoy with plain white rice, idli, dosai, and venpongal.!!
