Paruppu Usili

IngredientsServings: 4

  • 4 cups finely chopped green beans
  • 2 tsp salt ( as per taste)
  • 1/2 cup channa dal
  • 1/2 cup toor dal
  • 10 pieces whole red chillies (2 for tempering, 8 for grinding)
Prep work
  • soak channa dal and toor dal together for 1 hour in lukewarm water
For Grinding
  • soaked dals, 8 pieces of red chillies, asafoetida, curry leaves, and 1/2 tsp salt
  • add all the above ingredients into a blender and grind it to coarsely paste
For tempering
  • 3 tbsp cooking oil
  • 1 tsp mustard seeds
  • 2 tsp urad dal
  • 1 sprig curry leaves
  • 2 whole chillies
  • pinch of asafoetida

Paruppu usili is a delicious south indian dish that can go with plain white rice, side for any of other rice varieties. It is also known as one of the dish in most of the south indian marriages and is a protein rich dish.

Instructions

  • add chopped beans in a pan along with 1 cup of water and 1/2 tsp salt
  • cook on medium high flame until beans are tender (5 to 8 minutes)
  • once beans are cooked drain the water and keep it aside
  • in a pan add 2 tbsp cooking oil and add mustard
  • once mustard seeds have sputtered add urad dal, asafoetida, curry leaves
  • fry until urad dal turns light brown
  • add ground dal paste and mix well
  • close the lid and stir every 5 minutes for about 15 minutes
  • once the dal mixture is cooked add the cooked, drained beans and mix well
  • close the lid and let it cook for 3 more minutes
  • add salt according to the taste and turn off the stove
Tips & Tricks
  • use lukewarm water to soak dals which will speed up the soaking process
  • add couple of tsp water if needed while grinding (don't use too much water)
  • beans can be replaced by kothavarangai or cheeni avarakkai

Step by Step Instructions

  1. soak channa dal and toor dal together for 1 hour in lukewarm water

  2. add chopped beans in a pan along with 1 cup of water and 1/2 tsp salt, cook on medium high flame until beans is tender (5 to 8 minutes), once beans are cooked drain the water and keep it aside

  3. in a blender add soaked dals, red Chillies, asafoetida, curry leaves, and 1/2 tsp salt and grind it to coarsely paste (add couple of tsp water if needed)

  4. in a pan add 2 tbsp cooking oil and add mustard, once mustard seeds are sputtered add urad dal, asafoetida, curry leaves, fry until urad dal turns light brown

  5. add ground dal paste and mix well

  6. close the lid and stir in between 5 minutes for about 15 minutes

  7. once the dal mixture is cooked add cooked, drained beans and mix well, close the lid and let it cook for 3 more minutes. Adjust the salt if needed and turn off the stove.

  8. healthy paruppu usili is ready and enjoy with hot white rice or as a side dish for any variety rice!!
