Vazhakkai Fry

  • 3 tbsp cooking oil
  • 3 medium sized raw banana (plantain) chopped into cubes
  • 1 tsp chilli powder
  • 1 tsp salt (as per taste)
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp asafoetida

Instructions

  • peel plantain skin, wash, and chop into small cubes
  • in a mixing bowl add chopped plantain, chilli powder, coriander powder, turmeric powder, asafoetida, and salt. Mix well
  • in a frying pan add cooking oil
  • once oil has been heated add mixed plantain
  • saute and close the lid
  • cook them until plantain is soft, mix once in a while for 10 minutes
  • once it has softened, let it cook without the lid for a few more minutes to get the crispy texture
  • turn off the stove and serve as a side dish for any rice varieties!
Tips & Tricks
  • use heavy bottom pan to get crispy fry
  • adjust spice and salt level as per taste
  • don't over cook any vegetable because overcooking will not only result in the loss of important nutrients, it will also drain the flavor
  • once it has softened, cook it uncovered for few more minutes, add 2 tsp of oil (optional) to get the crispy texture
